This Herb-Roasted Chicken recipe features the delicious, tender meat from our pasture-raised chickens, seasoned with fresh herbs and roasted to perfection. It’s an easy, one-pan dish that’s perfect for family dinners or special occasions.

Directions
Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 3 tbsp olive oil
- 1 lemon, halved
- 4 cloves garlic, smashed
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper, to taste
- 1 cup chicken broth (optional, for extra flavor and moisture)
Instructions:
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels. Rub the outside of the chicken with olive oil, then season generously with salt and pepper.
- Stuff the cavity with lemon halves, garlic cloves, and fresh herbs.
- Place the chicken in a roasting pan, breast-side up. Optionally, pour chicken broth into the pan to keep the chicken moist.
- Roast the chicken in the preheated oven for 1 hour to 1 hour 30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
- Let the chicken rest for 10 minutes before carving and serving.
