Directions

Ingredients:

  • 2 rabbit legs (or 1 whole rabbit, cut into parts)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 sprigs fresh rosemary, chopped
  • 1/2 cup white wine (or chicken broth)
  • Salt and pepper, to taste
  • 1 tbsp butter (optional, for richness)
  • Fresh parsley, for garnish

Instructions:

  1. Season the rabbit legs with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the rabbit legs and sear them for about 3-4 minutes per side, or until golden brown.
  3. Add the minced garlic and rosemary to the pan and cook for another minute, until fragrant.
  4. Pour in the white wine (or chicken broth) and bring to a simmer. Lower the heat to medium and cover the skillet. Let the rabbit cook for 15–20 minutes, or until the meat is tender and easily pulls away from the bone.
  5. Optional: Stir in butter for extra richness and smoothness.
  6. Garnish with fresh parsley before serving.
