Ingredients:
- 2 rabbit legs (or 1 whole rabbit, cut into parts)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 sprigs fresh rosemary, chopped
- 1/2 cup white wine (or chicken broth)
- Salt and pepper, to taste
- 1 tbsp butter (optional, for richness)
- Fresh parsley, for garnish
Instructions:
- Season the rabbit legs with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Add the rabbit legs and sear them for about 3-4 minutes per side, or until golden brown.
- Add the minced garlic and rosemary to the pan and cook for another minute, until fragrant.
- Pour in the white wine (or chicken broth) and bring to a simmer. Lower the heat to medium and cover the skillet. Let the rabbit cook for 15–20 minutes, or until the meat is tender and easily pulls away from the bone.
